The past month or so, I've been seeing several recipes across social media for "impossible pie." Why is it impossible? It makes its own crust. I have to say that this was pretty appealing to me. No one except me likes pie crust in my house, and honestly, my crust making skills are lacking. I blame little practice. There are many varieties of impossible pie, but all of them use bisquick or some other type of baking mix. Basically, you mix up all the ingredients, throw it into a pie dish, and bake. It "magically" makes a crust on its own. I love the flavors of chocolate and peanut butter, and after some research, I could only find a peanut butter or a chocolate impossible pie...so I made my own version. This is a super easy dessert made with ingredients that I think most people have in their kitchens already!!
Howdy folks! If you're in the USA, I hope that you are having a wonderful Memorial Day weekend. So far, we've had two little girls graduate from Pre-K, panned for gold, hiked about 3 miles at a local park, toured a cavern, and hiked some more to a waterfall. And somehow, we drove 2 hours to run into a classmate of my oldest child and some friends that live down the road for us. I'm looking forward to just relaxing tomorrow!! I love making frozen treats from scratch!! I've made popsicles, ice cream, and now...sorbet! And guess what: I don't use any special tools - no ice cream maker! This strawberry lemonade sorbet is the perfect blend of sour and sweet - perfectly refreshing on a hot day without weighing you down!
I love lemons...but my kiddos and husband can't handle too much tart/sour flavors. So I came up with this dessert that is perfect this time of year when strawberries are in season!
Here's how you make it:
How was your weekend my friends? We've finally come down to the last few weeks of the school year, and now it's really going to be crazy. Especially Friday when we are celebrating the twins...they are graduating from Pre-K. That's really hard for me to believe. We've gone from so small...under 4 pounds for each of them when they were born...to 90th percentile 5 year olds that are getting ready to start kindergarten! But time stops for no man, so this mama is going to try to savor every minute! Here's the menu plan for this week:
Monday: Breakfast for Dinner, fruit
Tuesday: Gourmet Grilled Cheese and Fruit
Wednesday: Steak Fajitas, Salad (fajitas are a great way to use leftover steak!)
Thursday: My husband's work is having a get together at dinner for the whole family
Friday: Italian Sausage and Bean Soup and bread - I'm going to try it in the slow cooker!
Saturday: Hamburgers on the Grill

Remember how I started working on the twins' bedroom last month? I haven't made nearly as much progress as I'd like, but I'm happy to say that this weekend I wrapped up another part of the room. They are quick to point out that I took their nightstands back when I redid my office to be the base of my desk. So yes, it's been over a year since they had nightstand in their room.
However, I had a good excuse! I just couldn't find another nightstand I liked, that would fit into the space in their room, and look good, too. But then I finally stumbled across this little table at a yard sale. I knew we could make it work!
All it took was a little bit of love (and some paint)!
Howdy folks! It's been a fun, fun weekend with loads of things accomplished. My husband and I got a date night Friday night for the first time in a long time. We saw Captain America: Civil War (so, so good!). We got my eldest her first bike without training wheels. Today, we went to a birthday party for a one-year-old. Now it's time to get things ready for the next week. It's time for a meal plan!
Monday: Crockpot Chicken Tacos, Salad, Strawberry
Tuesday: My husband is in charge of dinner - I'll be in a meeting.
Wednesday: Parmesan Pepper Sausage Pasta

Howdy everyone! I hope that you had an amazing Mother's day. We had loads of fun at a local drive through zoo. This week is going to be a little bit crazy with school open house for the kids to hear about next year. Ya'll. It's going to be in the 90's this week here. I am not ready for this. These days, I really love spring and the mild weather. But with hotter weather approaching, it's a good idea to have loads of popsicles in the freezer to keep folks cool. And I love making popsicles - most of the time the ingredients are very few, the prep is easy (although you do need to plan ahead), and it's pretty healthy if you put fruit in! My kids will accept fruit as dessert on occasion, but they will rebel if I do it too much. That's why making fruit based ice pops are a win-win for both mommy and kids. These Creamy Strawberry Pops add in yogurt and gets some calcium in the mix, which makes it even better.
I do have to add a super secret ingredient into the mix. There are some spices that just add a little depth of flavor that you just can't put your finger on. Adding my secret ingredient will take these popsicles to the next level.
Do you know what day tomorrow is? It's May the Fourth, also known as Star Wars Day, because, well..."May the Force (Fourth) be with you" is a famous phrase from the movie series. I think I might have mentioned that around here, everyone is a fan – even our little girls. In honor of that story a long time ago in a galaxy far, far, way, I thought I'd share a few great crafts and treats that are perfect to celebrate Star Wars Day, or just to make your Star Wars fan's day a little brighter!
