Parmesan Pepper Sausage Pasta

Do your kids make weird demands of your cooking? Yeah, mine do too. A common request when I'm making pasta is to not have sauce. Now, I grew up always having sauce with pasta, and I don't often give in to dining requests from the littles, but since my husband was travelling last week, I decided to give into the request...you know, to keep the peace. This is the dish I came up with: Parmesan Pepper Sausage Pasta


Ingredients:
8 oz penne pasta
12 oz smoked turkey sausage
4 small sweet peppers (or 1 bell pepper)
1 tablespoon extra virgin olive oil
1/4 cup grated Parmesan cheese, or more, to taste.

Cook pasta according to package directions. While the pasta is cooking, slice sausage and dice pepper. Saute in a non-stick pan with olive oil over medium-high heat, until sausage is brown and peppers are tender. Drain pasta. Toss pasta, peppers, sausage, and cheese. Serve immediately.
