Italian Chicken Roll Ups

Sometimes, as a blogger, I feel that my role is to say, "what if?" For example: what if a pizza met and fell in love with a chicken pot pie? What would their child look like? Well, I am here to tell you, their child would be an Italian Chicken Roll Up, and it would look something like this:


This is a hearty Italian-inspired dish that doesn't involve a sauce. Because I have one child that is anti-sauce. Unless it's ketchup. Or maybe mustard. Because that makes lots of sense.

Anyway, this is also a good dish to use up leftover chicken. Here's what you need:

1 lb Pizza dough (you can make your own or buy some at the store. I used this pizza dough from Cherished Bliss.
3 tbsp extra virgin olive oil
1 tsp Italian seasoning
1/4 tsp crushed red pepper
1/4 tsp fennel seed
2 cups shredded, cooked chicken. I used leftover Crockpot Rotisserie Chicken
1 cup shredded mozzarella cheese

Preheat oven to 425. Roll out dough on a non-stick pan into a rectangle.  Mix oil, Italian seasoning, red pepper, and fennel seed with a whisk.


Pour over shredded chicken and mix well. Spread chicken mixture over dough. Leave about 1 inch of a long side clear of filling. Spread cheese over chicken mixture.


Roll up starting with the side opposite of the dough clear of filling.


Bake for 20 minutes.


Slice and enjoy!
