Parmesan Chive Crusted Tilapia

A couple of weeks back, I was talking to someone who isn't as adventurous as I am about cooking. She had never cooked tilapia before, and wasn't sure how to proceed with cooking it. 

I developed this Parmesan Chive Crusted Tilapia recipe just for her. I love the flavor of chives, and I'm excited to have some in my new herb garden, but you could use any fresh herb (or a little dried herb) in place of the chives. 


In fact, if you're looking for an easy way to cook any white fish, or if you're just starting out with cooking fish in general, this recipe is for you.


Here's what you need:

1/3 cup grated Parmesan cheese
1 tablespoon fresh chives, minced
1/4 tsp pepper
4 filets of tilapia or other white fish, thawed

Heat a non stick skillet on medium high heat. Mix the cheese, chives, and pepper in a shallow dish. Dredge each filet of fish in the cheese mixture.


Cook the fish in the skillet, 3-5 minutes on the first side, then flip and repeat. Your fish is done when it is white and flaky on the inside (the time will depend on the size of your filets).


That's it! This is an easy weeknight meal. We enjoyed it with roasted potatoes for a modern take on fish and chips.
