Menu Planning Monday 2015-02-02

Hi! How are you? Are you ready for another week of menu planning? This past weekend Lil Bit and I made chicken enchiladas for the first time ever. Other than making it a little to spicy for the kids, I think it was a success. It really is important to have kiddos help cook a meal. Lil Bit immediately rejected the ideas of enchiladas when I explained what they are (she prefers everything separate so she can assemble it), but when I told her she could assemble it with mommy before it went in the oven, she was immediately on board. I really think she would have inhaled it if it hadn't been quite so spicy. But I guess the lesson is that kids are more likely to eat something new if they feel that they have a vested interest in it.



Anyway, here's the plan for this week:

Monday: Salad, Cheese, Crackers and Fruit
Tuesday: Veggie Fried Rice
Wednesday: Spaghetti with Dressed Up Sauce


Thursday: Parmesan Chive Tilapia, Green Beans, Bread



Friday: Leftovers
Saturday: Italian Sausage and Bean Soup


Sunday: I think we'll do a couple different versions of pizza. We'll have twice the number of kids with us (yay for babysitting swapping), so we'll just play this one by ear depending on the kids. I may even let the kids cook us grownups a dinner!
