Naan Mexican Pizza

What do you get when you mix Asian, Mexican and Italian cuisine in an hour or dinner desperation? Naan Mexican Pizza.



I'm always on the lookout for a quick recipe to fill our bellies in record time, and this recipe definitely fits the bill--dinner was on the table in less than 20 minutes! Even better, this recipe is highly customizable. You could add taco meat or chicken, or leave it as it is for a vegetarian recipe!

Here's what you need:

4 large naan
8 oz (half a can) of refried beans
1/2 pouch of taco seasoning
2 large sweet banana peppers
1 cup shredded cheddar cheese
salsa and sour cream for serving

Preheat oven to 400. Place naan on a cookie sheet. Spread refried beans onto the naan, and then sprinkle the taco seasoning oven the beans. Place the chopped peppers over the refried beans, Top with cheese. 


Bake for 10 minutes until the naan is crispy and the the cheese is melted. Serve with sour cream and salsa.
