Crockpot Honey Spice Applesauce

Is it fall yet? Not here in the Carolinas, where the A/C is
cranked up and still not managing to keep up. But it's September, and that
means it's apple season!! Every year, I cannot wait to make applesauce in my
slowcooker. It's a so-simple dish that even though my kiddos are getting
bigger, we still all love.
And because my kids are getting bigger, I've changed things
up a little with my recipe. Last year, I made a simple spiced applesauce. This
year, I decided to add some honey and a different spice combination. If you've
never made applesauce in your slowcooker, you need to try this.You simply won't go back to store bought applesauce again.
Here's what you need:
12-14 apples, cut into eighths. Be sure to check that all
the apples fit into your slowcooker!
1 cup water
1 2 inch piece of whole cinnamon
1 1/2 tablespoons whole allspice
3-4 tablespoons honey
Dump the apples, water and cinnamon into the crockpot. Place
the allspice in a tea ball and place in the crockpot. It's going to look like
there's not enough water, but trust me, there's enough. I don't peel my apples
because there's loads of fiber in the peel, but if you don't like the peel, you
can always peel your apples.
Cook on high for 4 hours. This is what you'll see after it's cooked.
You can smash the apples by hand or you can use an immersion blender. Stir in the honey. Makes 2 quarts. I freeze my apple sauce. If you want to can this, you'll need to add some lemon juice.
