4 Ingredient Pumpkin Butterscotch Cookies #31days #creatingwkids

Do you know one of the hardest parts of baking with kids? Keeping them from eating the raw dough. Part of the reason it's so tough is because you want to sneak some dough yourself.

The way you fix that is to replace the raw eggs with something else...like pumpkin.

And of course, this is the time to enjoy all things pumpkin. So, in an effort to make a new cookie recipe to enjoy the raw dough the flavors of fall, Lil Bit and I made this yummy Pumpkin Butterscotch Cookie Recipe--with only 4 ingredients!


Here's what you need:


(1) 16 oz can pumpkin puree
1 tbsp pumpkin pie spice
1 box yellow cake mix
1 1/2 cups butterscotch chips

Preheat the oven to 350 degrees. Dump the cake mix into the the bowl.

Add the pumpkin and pumpkin pie spice. Sequined headband is completely optional.

Mix well.


Fold in the butterscotch chips.


Place by rounded teaspoons on a non stick cookie sheet or one with parchment or a silicone mat. Bake for 12 minutes.


Cool on a rack. Enjoy, and plan on making another batch, because these won't be around long!
