Anybody here find a fabulous recipe concept and then spend all of their time making variations on it? Right now I'm stuck on pumpkin cookies. First I made the Butterscotch Pumpkin Cookies a few weeks ago. This past weekend, I wanted some more pumpkin yumminess to take to a friend's house, but I didn't want them to be so super sweet, as butterscotch tends to make things. So I settled on these amazing and simple Pecan Pumpkin cookies.
And since they are super simple, I had my best helper on hand to do the heavy work--you know, like stirring.
1 can pumpkin
1 box cake mix
1 tablespoon pumpkin pie spice
1 cup of pecans, roughly chopped.
Preheat the oven to 350F. Mix the cake mix and spice mix together. Add the pumpkin and nuts and mix well.
Place the dough on a nonstick baking surface by rounded teaspoonfuls.
Press the dough slightly with the back of a spoon. Bake for 13 minutes. Cool on a rack.
