Fiesta Twice Baked Potatoes

Are you looking for a non-traditional dish for your Cinqo de Mayo celebration? Or do you just want to spice up some leftover baked potatoes? If the answer is yes, then you should try these easy twice baked potatoes. They are a big hit in my house.


We love twiced baked potatoes, but sometimes we have leftover baked potatoes….but we’re out of sour cream. This recipe came about because of just such an event. It is super simple, and it really isn’t too spicy for kids.

Ingredients:


1/3 queso cheese dip (we use some we get at Costco)
1/2 medium bell pepper, diced
4-5 previously baked potatoes (depending on size)

Preheat oven to 425. If the potatoes have been refrigerated, microwave for 2 minutes on high. This brings up the temperature in the potato, cutting down on baking time. Dice the pepper. Cut the potatoes in half lengthwise and scoop out contents, leaving about a 1/4 inch shell. Mash the potato insides in a bowl. Add queso and bell pepper and mix well.


Return the potato mixture back to the shells.


Bake for about 20 minutes, or until the filling is bubbling and starting to brown.
