Juiced Up Carrots

Vegetables can be a little bit of a struggle in my house. There are even some grown ups (who shall remain nameless, but that person's name isn't Rachel) who struggle to eat veggies. But these Juiced-Up Carrots are a little sweet, just tender, and a perfect side for most meats!
And since it takes about 20 minutes and 3 ingredients (if you count water as an ingredient), it's perfect for a weeknight meal.
6-8 oz juice (I just used a juice box because that's what I had)
2 cups carrots
enough water to cover carrots
Bring all ingredients to a simmer in a small covered pot.
Cook about 15-20 minutes, until carrot has reached the desired doneness...we prefer crisp tender in our house.
