Blackberry Lime Sorbet

Y'all, right now, it's hot around here. Like, cook a egg on the pavement hot. Like walk across a parking lot and feel like that cooked egg hot. And the only way that you can really cool off right now is to find something really cool to eat...like a sorbet. Sorbets are like ice cream, but they seem lighter, so when you are weighed down by all the heat and you don't feel like eating anything....try a sorbet. This Blackberry Lime Sorbet is super easy and features blackberries, which also happen to be in season right now!


Here's what you need:

2 cups sugar
2 cups water
around 6 limes
6 oz blackberries

Mix sugar and water in a medium saucepan, Heat over medium heat, stirring, until sugar completely dissolves and the mixture comes to a boil. Boil 1 minute, and then remove the syrup from the heat and allow to cool.

Grate about 2 tablespoons lime zest and juice all of the limes. I got between 2/3 and 3/4 cup of lime juice.


Mix the lime juice into the syrup and pour into a freezer safe container. Place in freezer and stir every 30 minutes. Dice the blackberries.


When the ice crystals are just starting to form, mix the berries into the sorbet. Stir every 30 minutes for at least 3 hours. Cover and allow to freeze overnight.


Makes 6-8 servings.
