Creamy Peach and Strawberry Pops

When the really, really hot weather comes, I find that all I really want to eat is something cold, even for dessert. Around our house, that means a lot of popsicles. But although we do eat a lot of store bought popsicles, I prefer the ones made from fresh fruit. It makes this mama feel a little better when dessert comes around. This recipe has sour cream to make the pops creamy, which adds another layer of flavor that I love (if you've never had sour cream with fruit, you must try it!



Here's what you need:

2 cups fresh peaches, diced
1 cup fresh strawberries, diced
1/2 cup baking blend of stevia and sugar
3/4 cup sour cream

In a food processor, puree peaches and strawberries. Fold in stevia and sour cream. Pour into popsicle molds. Freeze overnight.


Makes 8 popsicles.
