Chocolate Peanut Butter Impossible Pie

The past month or so, I've been seeing several recipes across social media for "impossible pie." Why is it impossible? It makes its own crust. I have to say that this was pretty appealing to me. No one except me likes pie crust in my house, and honestly, my crust making skills are lacking. I blame little practice. There are many varieties of impossible pie, but all of them use bisquick or some other type of baking mix.  Basically, you mix up all the ingredients, throw it into a pie dish, and bake. It "magically" makes a crust on its own. I love the flavors of chocolate and peanut butter, and after some research, I could only find a peanut butter or a chocolate impossible pie...so I made my own version. This is a super easy dessert made with ingredients that I think most people have in their kitchens already!!


Here's what you need:

2 eggs
1 cup milk
2/3 cup peanut butter
1/4 cup unsalted butter, softened
1 cup brown sugar, packed
4 tablespoons cocoa powder
1/2 cup bisquick

Preheat oven 350 degrees F. Mix all ingredients in a mixer on medium for about 1 minute, or until well blended. Use cooking spray or butter wrapper to grease a pie dish well. Pour mixture into prepared pie dish and bake for 25-30 minutes. Allow to cool. 


Serve alone or with whipped cream or ice cream.


Makes 12 servings.

  2. I made this and I loved the creamy peanut butter texture. I am making it again as I write but with a higher end cocoa powder. This pie didn't make a crust like other impossible pies. But, it is so delicious that I didn't care.
