Mint Chocolate Cool Whip Cookies

The holidays bring parties and cookie swaps! Are you ready with a go-to cookie recipe? I was just introduced to cool whip cookies. Using cake mix and cool whip you can make cookies in no time, and they are just the right level of chewy...so good. This variety is pretty simple - chocolate mint. I think of 2 kinds of cookie when I think of Christmas - gingerbread and mint. So of course I just had to try mint at the first gathering of the season. I'll be bringing these to some other holiday events for sure!


Here's what you need:


1 box chocolate cake mix (I used triple chocolate fudge cake because it has mini chocolate chips)
1 1/2 teaspoon mint extract
1 large egg
8 oz cool whip

For topping:
1/2 cup granulated sugar
2 teaspoons each of silver and green crystal sanding sugar (optional)

Preheat oven to 350 degrees F. Put parchment paper or silicone baking mat on cookie sheet. Mix together cake mix, mint extract, egg, and cool whip (batter will be stiff).



Mix together sugar and decorative sanding sugar.


Drop batter by teaspoon full into sugar mixture. Roll to coat completely.


Place on cookie sheet, about 2 inches apart.


Bake about 15 minutes.


Allow to cool on the cookie sheet. Remove with a spatula. Makes around 2 dozen cookies.
