White Chocolate Pumpkin Fluff

I love this easy and simple dessert...White Chocolate Pumpkin Fluff--potluck ready and perfect for holiday meals!


Growing up in the south meant lots and lots of potluck meals. My grandma's church did homecoming with 2 long lines of tables with every potluck dish known to man. My family holidays are the same way; everyone cooks and brings a few dishes to share. And at those potluck meals, a typical contribution was "congealed salads" - a salad with a base of jello or pudding. These salads were only salads in that they occasionally contained a fruit, but they were always sweet and definitely more dessert than salad.  They were light desserts...but calling them salads made us all feel a little bit better. This pumpkin fluff makes me think of those congealed salads. There is a nod to the fruit and vegetable food group (hello pumpkin), but the rest of the ingredients make a light and easy dessert. In fact, if you're looking for an easy dessert for Thanksgiving, you can get this ready in 5 minutes, put it in the fridge, and move on to another dish!


(1) 8 oz tub of whipped topping
1 cup canned pumpkin
1 3.4 oz box instant vanilla pudding mix (I used French Vanilla)
1/2 tablespoon pumpkin pie spice (I used homemade)
1 cup miniature marshmallows
1 cup white chocolate chips

Mix together the whipped topping, pumpkin, pudding mix, and pumpkin pie spice. When well combined, fold in marshmallows and white chocolate chips. Chill for one hour before serving. Makes 8-10 servings.
