Spicy French Onion Roasted Chickpeas

Chickpeas...Garbanzo beans. Imagine me trying to explain to my little girl that they are the same thing. She was very confused. This recipe is super simple - my little girl helped me mix up the spices. She wasn't too keen to try something too spicy, but this easy snack has just a little bit of heat--perfect!



If you are looking for an easy snack that's way healthier than a bag of chips - this is definitely it!


Here's what you need:

2 15 oz cans garbanzo beans (chickpeas)
3 tablespoons extra virgin olive oil
3 tablespoons french onion soup mix
1/2 teaspoon crushed red pepper

Dump the chickpeas into a colander. Rinse well and allow to dry by placing on a few layers of paper towels on a sheet pan for around 30 minutes. Preheat oven to 400 degrees F. Line a baking sheet with foil and spread out chickpeas into a single layer. Bake for 40-45 minutes, or until crispy. Mix remaining ingredients in small bowl. Pour roasted chickpeas into a medium mixing bowl & pour seasoning mixture over and mix well. 

Place back onto foil covered sheet pan and roast for 5 more minutes.
