Chocolate Peanut Butter Baked Oatmeal Muffins

With school starting next week, we're all looking for quick and easy breakfast ideas to make the mornings go smoother. But I want my girls to have a breakfast that sticks with them all day. These peanut butter and chocolate baked oatmeal muffins are perfect--they are easy because they are prepped ahead of time, and they are super filling!

4 cups old fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup mini semisweet chocolate chip
3 tablespoons peanut butter
2 cups milk
1 egg
1 tablespoon sugar

Preheat oven to 375 F. Place liners in a muffin tin . Mix oats, baking powder, salt, and chocolate chips in a large bowl.  In a small mixing bowl, whisk until combined peanut butter, milk, egg, and sugar. Add the wet ingredients into the dry ingredients and stir well to combine.

Using an ice cream scoop, fill each muffin well. You may need to press down on the mixture a little to get the air pockets out. Bake for 30-35 minutes, or until the muffins are golden brown on the top. Remove to a cooling rack and cool completely.


Enjoy hot or cold; with milk, or just by itself. Makes 12 muffins
