Chocolate Peanut Butter Baked Oatmeal Muffins

With school starting next week, we're all looking for quick and easy breakfast ideas to make the mornings go smoother. But I want my girls to have a breakfast that sticks with them all day. These peanut butter and chocolate baked oatmeal muffins are perfect--they are easy because they are prepped ahead of time, and they are super filling!
4 cups old fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup mini semisweet chocolate chip
3 tablespoons peanut butter
2 cups milk
1 egg
1 tablespoon sugar
Preheat oven to 375 F. Place liners
in a muffin tin . Mix oats, baking powder, salt, and chocolate chips in a large bowl. In a small mixing bowl, whisk until combined peanut butter, milk, egg, and sugar. Add the wet ingredients into the dry ingredients and stir well to combine.
Using an ice cream scoop
, fill each muffin well. You may need to press down on the mixture a little to get the air pockets out. Bake for 30-35 minutes, or until the muffins are golden brown on the top. Remove to a cooling rack and cool completely.
Enjoy hot or cold; with milk, or just by itself. Makes 12 muffins
