Minty Pineapple Fruit Pops (only 2 ingredients!)

When it is warm outside, one of my favorite desserts is popsicles. It's a good thing my kids love popsicles even more than I do. What makes it even better to this mama is when I can make homemade popsicles out of fruit and herbs and then pass off a healthy fruit as a dessert to my kids—with no sugar added! A little bit of mint adds a freshness to the taste of these pineapple popsicles and makes them a little more special.


And if you use canned pineapple like I did, you can prep these in only 5 minutes! Freeze them overnight and get ready to keep cool on hot days.

Ingredients:
1 20 oz can of chunk pineapple in juice
1/4 cup fresh mint, loosely packed.


Place pineapple with juice into blender. Add mint. Puree until smooth (add a little water if you need to create a pourable mixture). Pour into a popsicle mold and freeze overnight. Makes 10-12 popsicles, depending on the size of the molds.
