White Chocolate Pecan Crispy Rice Treats

As the summer heats up, I'm always looking for easy recipes that won't heat up my kitchen. White chocolate pecan crispy rice treats is a perfect option!


Don't think of these as your childhood snack—this dessert has been dressed up with some fun add ins. The best part—it's made with the microwave in minutes, so it's easy and doesn't heat up the kitchen one bit! I love this kind of recipe, especially since it is so kid friendly from start to finish. (They don't mind eating them, either!)


Here's what you need:

3 tablespoons unsalted butter
1 10 oz package of miniature marshmallows
6 cups crisp rice cereal
1/2 cup pecans, roughly chopped
3/4 cup white chocolate chips
Non-stick spray

Grease a 9x13 dish and set aside. In a large microwave safe bowl, melt the butter in your microwave. It will only take 20- 30 seconds. Put the marshmallows in this same bowl, stir well to coat with the butter. Microwave in 30 second increments, stirring between, until the marshmallows are melted. Add cereal and pecans a little at a time, stirring well, until well combined. Add white chocolate chips (you do this at the end to keep the chips from getting all melty) and stir until combined.

Use a greased spatula to press the mixture into the prepared dish. Wait until completely cooled and set before cutting into squares. Makes 24 servings.
