Crockpot Beef Stew

Sometimes, all you want for dinner is some comfort food. My husband has been asking for some beef stew or roast…like his mom makes. So I made up this beef stew recipe based on some of the ingredients that my mother-in-law uses…but also using items I had on hand in my house.


The best part of this recipe is that it is a slow cooker recipe. Comfort food is great for winter time, but I find that slow cooker meals are perfect for summer time, too—it doesn’t heat up the house like other cooking methods. I think we’re going to use this recipe again all year ‘round!

Ingredients:


2 lb stew beef
1 pouch French onion soup mix
28 oz canned tomatoes
14 oz beef broth
About 4 oz baby carrots, cut in half on the bias.
1 potato, diced into 1 inch chunks (mine was previously baked, but I think that’s optional)
1 medium onion, diced (or a half of a huge one)
1/2 medium bell pepper, diced

Dump all the ingredients into your slow cooker.  Stir to mix well. Cook on low for 8-10 hours. Serve with bread and maybe a sprinkling of cheese on top.
