Lime Roasted Broccoli

I love broccoli. So when I stumbled across a recipe on pinterest for the "best brocolli ever" from The Amateur Gourmet over a year ago, I knew I had to try it. We've made his recipe many times, but if you read this blog much, you know I can't leave a recipe alone--I have to experiment! So this is my variation which resulted from an over abundance of limes in my produce basket a couple of weeks back.
Lime Roasted Broccoli (Serves 2-3)
Ingredients:
1 large bunch of brocoli
1/2 tsp cumin
2-3 tbsp olive oil
1 clove garlic, chopped
1 cup shredded parmesan cheese
1 lime
Preheat oven to 425. Wash and dry broccoli very well. Chop in regular pieces. Chop garlic.
Mix olive oil, broccoli, cumin and garlic. Place on foil on a cookie sheet in a single layer. Roast for 20 minutes or so. While broccoli is cooking, zest your lime.
Reserve the lime; you'll need the juice.
After about 20 minutes or so, take your broccoli out of the oven. It will look like this.
Sprinkle lime zest over the broccoli, then sprinkle the cheese over the broccoli. Finally, squeeze the lime over the broccoli. Throw the broccoli mixture back into the oven for 5 more minutes, or until the cheese is melted.

This sounds interesting. I love to roast vegetables, it gives such great flavor. I would not have thought to add lime. Will have to try it.
