Sometimes, you create a recipe and you love it at first bite.
However, this recipe needed more than just 1 try. It needed some love. I ended up backing off some with the lime and cilantro for my family from the original version that I made.
If you love cilantro and lime, then this is your recipe. It's a perfect side for a Mexican type dish, like tacos. But I know that many people just don't like cilantro. It's one of those foods either you love or you hate.
So for all the cilantro lovers in the world, here's a recipe for you.
Cilantro Lime Corn
1 16oz package of frozen corn
1/2 onion, diced
the juice of 1 lime
1 tsp olive oil
cilantro, to taste--diced
salt, to taste
Saute onions in oil over medium heat.
Once onions are softened, add corn.
Cook until warmed through and corn has some slightly brown edges.
Toss in lime juice, salt , and cilantro.
