Squash & Apple Hash (with Sausage!)

Sometimes I make up recipes because I’m bored of what we’re eating, or to adapt to my family’s tastes.

This recipe came to be because the original recipe was just too hard to serve to toddlers.


I don’t mind spooning applesauce into waiting little mouths, but for the most part we try to be self serve around my house at dinner. For the twins, that typically means holding a spoon in one hand and then grabbing pieces of food with the other.

I have this beautiful stuffed acorn squash recipe from a Southern Living at Home cookbook. It has sausage and apples and brown sugar and is super yummy and great presentation. But life with little ones has its realities, and I really don’t enjoy chopping piping hot squash into toddler-sized bites. So I rarely serve that recipe, which is a real pity considering how much Sweet Pea and Princess Pea love squash.

Since winter squash is coming back into season, I decided to adapt the stuffed acorn squash recipe into something we all could enjoy. Basically, I tweaked some of the amounts and instead of baking everything in the squash, I chopped up the squash and cooked the whole mixture on the stove top.

You could very easily replace the acorn squash with another variety of winter squash. I like acorn squash because it’s easy to handle (smaller), but I hear that butternut squash is available in the freezer section of your local grocery store.

This is a perfect recipe if your goal this fall is to eat seasonally.

Squash & Apple Hash (with Sausage!)

Ingredients:

1/2 lb ground Italian Sausage (I used hot)
2 granny smith apples, cored and diced
1 medium to large acorn squash (or other fall squash)
1 tbsp brown sugar
1/4 tsp ground nutmeg
1/2 tsp cinnamon
1/2 tsp salt

Heat large pot on to boil. Cut squash into quarters and scoop out seeds. Put the quarters into the boiling water and cook for 10 minutes. Allow to cool slightly. Peel skin (or you can do this when it's raw--up to you). Dice.

While you're waiting for the squash to cool, remove casings off sausage.

Cook in a large skillet until brown. Drain skillet and place sausage back in the pan.


Put the rest of the ingredients into the pan.


Cook until the apples are tender. And that's it.


This is a relatively easy dinner, perfect for a weeknight, and my family loved it. It's both sweet and spicy.

  4. Wow, I'm wanting to lick my computer screen right now.. that looks DELISH!
    And I totally know where you are coming from with trying to find toddler friendly foods. I hate the whining of "I can't scoop it! Heelllpp meeee mama!" that comes with so many recipes. Which then makes me frustrated, and then our 3yo ends up getting mad and refuses to eat supper, even if it's something the loves... Ok, ending my rant :)
