Pumpkin Granola

It's that time of year.

The weather is cooler, and I for one start to crave cool weather food.

And I know it's a few days until fall, but one thing I start to crave is pumpkin. And since it was time to make some more granola for breakfast, I thought I'd throw some pumpkin into the mix and see what happens. Part of the reason I wanted to do this was to eliminate the oil and reduce the sugar in my granola. There is still some sugar in the mix, but with the apple sauce and the pumpkin, I feel that there is just the right amount of sweetness. So with reduced sugar and way less fat (and a whole lot more vitamin A from all that pumpkin!), I feel that my fall breakfast is way healthier than before, and it tastes like pumpkin pie!

Pumpkin Granola


Pumpkin Granola
6 cups old fashioned oatmeal
1/2 cup whole wheat flour (or other grain flour)
1/2 cup corn meal (or other grain flour)
1/2 cup coconut
1 tbsp cinnamon
1/2 tsp cloves
1/2 tsp ground ginger
1/2 tsp nutmeg
1 15 oz. can pumpkin
1/2 cup apple sauce
1/2 cup brown sugar
Pumpkin Granola Ingredients

Preheat the oven to 350. In a large bowl, mix oatmeal, flour, coconut, and spices. Toss in the pumpkin, apple sauce and brown sugar. Mix very well.

Spread mixture into a 9x13 non-stick cake pan.


Bake for 50-60 minutes, stirring well every 15-20 minutes, until desired doneness is reached.


Enjoy some fall in your breakfast bowl!

  26. Just made this,but made a few changes. I doubled the spices, added a scoop of vanilla protein powder and added some vanilla extract. I wanted to bump up the nutritional value as I suspect my husband will grab a handful and call it breakfast!

    1. Awesome!! I went easy on the spices because of my kiddos. Keep in mind that the pumpkin adds quite a big nutritional wallop. I'm thinking about adding some flax for some added protein, myself.
