Nacho Roasted Potatoes

One of my favorite ways to cook potatoes is roasting them. Like the recipe here, with loads of garlic.

But I wanted to do something different.

And this recipe, well, these are "nacho" ordinary roasted potatoes.

Ok, so it's a really bad pun.

But these aren't ordinary roasted potatoes. Instead, picture roasted potatoes married to nachos.




Or, if you like, a healthier version of nachos.

It was a big hit with my extended family.

Nacho Roasted Potatoes

2-3 red skinned potatoes, diced in 1/2 inch pieces
1/4 cup vegetable oil
1/4 tsp (or more to taste) spicy spice (or cayenne pepper) mix
1 tsp cumin
kosher salt to taste
8 oz shredded cheese
Any other things you might put on nachos: sour cream, jalapenos, tomatoes, and so forth

Preheat oven to 400 degrees. Mix oil, spice mix, cumin, and salt in a large bowl.


Take diced potatoes and toss in oil.


Take a metal cooling rack and place on a sheet pan. Spread potatoes out on metal cooling rack.


Bake for 30 minutes., or until done. Spread cheese onto potatoes and bake 5 minutes, or until bubbly.


Place toppings on top, to taste.
