"Grilled" Summer Squash in the oven

This past week, it was so very hot here I had planned to make dinner completely on the grill. The problem was when we got home from work, it was so blazing hot that my grill master (aka my husband) balked at the idea of firing up the grill. I couldn't stand the thought of sauteing the vegetables in an open pan. So on to plan b--putting everything in the oven. This is based on what I would have done on the grill.

"Grilled" Summer Squash...In The Oven


3-4 tbsp extra virgin olive oil
1/2 McCormick Salad Supreme seasoning
Salt and Pepper to taste
2-3 summer squash

Preheat oven to 375. Wash squash and cut off the ends. Slice squash lengthwise in 1/4 inch slices.


 In a small mixing bowl, whisk together seasoning and olive oil.


Take each slice of squash and brush oil mixture on with a pastry brush.



 Place each slice on a cooling rack placed on top of a baking sheet. Bake for 20 minutes, or until tender and browning at the edges.

  7. mmmm just made a similar version of this YESTERDAY with the first two summer squash from our brand new raised bed gardens - YUMMO!!
