Peach Baked Oatmeal Muffins

Since I have 3 girls in school now, we're constantly searching for convenient grab-and-go breakfast recipes. Baked oatmeal muffins definitely fit the bill - they are filling and depending on the add-ins, you can incorporate another food group into your morning grain. These peach baked oatmeal muffins get fruit and grain food groups into the first meal of the day - perfect!!
Here's how you make these baked oatmeal cups:

4 cups old fashioned rolled oats
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon allspice
1/4 teaspoon nutmeg
2 medium peaches, diced
1/4 teaspoon nutmeg
2 medium peaches, diced
1/3 cup honey
2 cups milk
1 egg
Preheat oven to 375 F. Place liners in a muffin tin . Mix oats, flour, baking powder, salt, allspice, and nutmeg in a large bowl. In a small mixing bowl, whisk until combined peaches, honey, milk, and egg. Add the wet ingredients into the dry ingredients and stir well to combine.
Using an ice cream scoop, fill each muffin well. You may need to press down on the mixture a little to get the air pockets out. Bake for 30-35 minutes, or until the muffins are golden brown on the top. Remove to a cooling rack and cool completely. Makes 12 regular size muffins

curious is the texture more like a muffin or oatmeal?
ReplyDeleteIf you have ever had baked oatmeal, then it's like that. It's more solid than regular oatmeal, but not as bread-like as a muffin. Hope that helps!
