Creamy Burritos - A Great Freezer Meal!

I am always looking for ways to make my life easier when cooking dinner during the work week. I work full time outside the home and have very little time to cook my three hungry girls and my husband! If it takes more than 30 minutes from start to finish, it is probably too long! That's why I try to utilize my freezer to help me out...through prepping food ahead of time. If you're looking for a yummy freezer meal full of protein, look no further!! This creamy version of a tex-mex favorite is a perfect week night meal, and is easy to prep, too!



Here' what you need:

1 bar cream cheese (16 oz), softened
1 package taco seasoning
1/2 lb meat of choice, cooked and shredded (I used leftover flank steak that I processed in my food processor
2 cups salsa
2 15 oz cans black beans, drained
1 cup shredded cheese, plus more for topping
10-12 (8 or 10 inch) tortillas

Cream the taco seasoning into the cream cheese. Fold meat, salsa, beans and cheese gently into cream cheese mixture until well combined. Scoop about 1/2 cup of the mixture into the center of a tortilla and roll up and place in a baking dish. Freeze if you desire. Bake thawed burritos in a preheated 350 oven for 25 minutes. Sprinkle shredded cheese on top of burritos for the last 5 minutes of baking.



Makes 12 burritos.
