Chocolate Coconut No-Bake Cookies

If you're looking for a last minute Christmas cookie idea, or just a sweet treat, have you thought of no-bake cookies? It frees up your oven and is really quick, especially compared to roll-and-cut cookies!The traditional recipe calls for a chocolate-peanut butter flavor, but I was inspired by Tiffany at Eat at Home to add one of my favorite flavors - coconut! Her recipe for no bakes is different from mine and her coconut version only uses coconut extract to get the coconut flavor, but my recipe uses shredded coconut! After all, I can never have too much coconut!
Here's what you need:2 cups sugar
2 tablespoons cocoa
1/2 cup milk
1/2 stick butter
2 tablespoons peanut butter
2 1/2 cups old fashioned oats
1 cup shredded coconut
Mix together sugar, cocoa, milk and butter in a medium sauce pan over medium heat. While waiting for mixture to bubble, spread out wax or parchment paper for a landing zone for your cookies. At first bubble, add peanut butter. Boil 1 minute, Remove from heat. Add 3 cups oatmeal and mix well. Put on wax paper by heaping tablespoon. Makes approximately 2 dozen cookies.
