Butterscotch Apple Crisp - a simple fall dessert recipe

Last week, Lil Bit was off from school because of a teacher workday. It was a random day in the middle of the week (why do school systems think this is a good idea?) and so we couldn't take off for a long weekend or anything like that. Instead, we were lucky enough that the daycare where she attends afterschool decided to do a field trip to the farm. I assumed that they would get pumpkins, but instead they picked apples. I ended up with a big bag of (I think) Granny Smith apples. So of course, we had to make an apple crisp with them because this mama didn't have the patience to deal with a pie crust this weekend. (Pie crust is a true labor of love for me...couple that with kids that aren't the biggest fan of pie crust and I just say why bother?) But I couldn't do a plain apple crisp...we had to have a butterscotch apple crisp because that just screams fall to me, but which sounded super easy and plenty yummy.

Here's what you need (note: some links may be affiliate links):
Filling:
cooking spray
2 cups apples, peeled an sliced
1/4 cup whole wheat flour
1/4 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp nutmeg
1 cup butterscotch chips
1/4 cup brown sugar

Topping:
1 1/2 cup old fashioned oats
1/4 cup whole wheat flour
1/4 brown sugar
1 stick butter, softened

Take a deep pie dish (I love mine - here's a similar one!) and spray with cooking spray. Preheat oven to 375. In a large bowl, combine apples, flour, spices, and butterscotch chips. Mix well. Add brown sugar and stir to combine. Pour into pie dish.

In another bowl, combine oats, flour, and brown sugar. Mix well. Cut in butter with a pastry blender or a fork until crumbly. Spoon this topping over filling.

Bake for 40-45 minutes until apples are bubbling, butterscotch is melted, and the topping is golden brown.

This dessert is good cool, but it really shine when it's warm...and maybe with a scoop of vanilla ice cream!!
