Chocolate Mint Brownie Cookies

Last week, I had my annual Christmas cookie exchange with my Ladies Bible Study Group. Since we meet Thursday night, I needed something that was easy to put together with minimal prep--and these Peppermint Chocolate Brownie Cookies fit the bill! Perfect for a Christmas cookie exchange or just a chocolate fix, these are as easy as it gets!


You do need to make the dough at least an hour in advance of baking, but there's no butter to soften, and there's no unusual ingredients! The best part is that the frosting is premade and it's easy to make the cookies look impressive by swirling the frosting on straight from the package!

1 package frosted brownie mix (has pouch frosting with the box)
1/4 cup cocoa
1/2 tsp peppermint extract
3 tablespoons water
1 egg
1 tablespoon vegetable oil

Open up frosted brownie mix box and set aside frosting pouch. Place brownie mix and cocoa in a medium mixing bowl and mix well. Add peppermint extract, water, egg, and vegetable oil and mix until combined. Chill for at least 1 hour.

Preheat the oven to 350. Line baking sheet with parchment paper or a silicone liner. Make 1 inch balls of dough and place them on the lined pan about 3 inches apart. Bake 11-12 minutes or until set.



Allow to cool on the pan for a couple of minutes, then remove to a cooling rack. Allow to cool completely, then snip the corner of the frosting pouch. Squeeze frosting directly onto cookie in a decorative pattern.



Makes 24 cookies.

Enjoy--I prefer these guys with a big cup of milk!
