S'mores Granola

It's been a while since I've shared a granola recipe with you. But this one's a doozy--S'mores Granola!


The past week it's been fairly cool in Carolina country for July, but most of the time in summer the thought of sitting around a campfire in the summer is just. too. hot. But I love the flavors of chocolate and marshmallows, so S'mores Granola is a perfect melding of those flavors into a yummy breakfast treat.

Here's what you need:
4 cups of old fashioned or rolled oats
1/2 cup dry milk
1/2 cup ground flax
3 tbsp cocoa
1/4 cup whole wheat flour
2/3 cup coconut oil
2/3 cup corn syrup
1 cup mini marshmallows





Preheat your oven to 325. Mix oats, milk, flax, cocoa, and flour together in a large bowl. Use the microwave to melt the coconut oil and mix with the corn syrup. Add the wet ingredients with the dry ingredients. Spread into a 9x13 non-stick baking pan and back for 40-45 minutes, stirring after 20 minutes.

Allow to cool and add marshmallows. Enjoy with milk or yogurt.
