Healthier Creamy Spinach Dip

I'm writing this as the BCS Championship is running, and we all know that there is another football championship coming up! But who am I kidding--when we get together to watch football, I am looking forward to the food as much as the football. But January brings all those resolutions to eat healthier, so I am always looking for a healthy snack. I think I've found my go-to dip!


This is an adaptation on the classic cold, creamy spinach dip. Who needs all that fat? Not me! This dip uses fat free sour cream, half the mayonnaise, and an extra dose of vitamins with some tomatoes!

Here's what you need:


1 box frozen chopped spinach, thawed and squeezed dry
16 oz of fat free sour cream
½ cup mayonnaise
1 package Knorr Vegetable recipe mix
1 small yellow onion, minced fine
1 tomato, diced

The key to this recipe is to get all the moisture out of the spinach and tomatoes. Drain them both, but definitely squeeze as much moisture as possible from the spinach.

Mix all ingredients except the tomatoes in a serving bowl .


Spread the tomatoes on top. Chill for at least an hour before serving. Enjoy with whole grain crackers or vegetables!
