Couscous Stuffed Peppers in the Slowcooker

When I think slowcooker meals, I think soups or big roasts—not necessarily vegetable based dishes. But when I started exploring stuffed peppers in the slowcooker, I knew we had a winner—my whole family loves bell peppers! This recipe has a little more prep work up front—but no more than 15 minutes.



This recipe looks really dressy, too, so if you happen to entertain on a weeknight, this may be a great go-to recipe for you.


1 box plain couscous, cooked according to package
1/2 lb mild Italian sausage, cooked
1 package Italian Parmesan Kraft Fresh Take Cheese and Breadcrumb mix, divided
5 large bell peppers

After cooking your sausage and coucous per package directions, mix sausage, couscous, and about half of the cheese and breadcrumb mixture together.


Cut the tops of the peppers off (retain those tops).


Stuff the filling into the peppers. Put them into the crockpot and put the tops back onto the peppers.


Cook for 4 hours on low in your slowcooker. When 15 minutes remain, remove tops from peppers, sprinkle with remaining cheese mixture. Replace tops and cook for 15 more minutes.
