I have been married for almost 10 years. And this Christmas season, I am in new territory as far as entertaining goes. This is the first
year that I will not be hosting a large gathering for either Thanksgiving or
Christmas or both. It feels kind of weird to not be shopping for the best price
on turkey! However, I will be hosting my mother- and father-in-law the week of
Christmas. This will be the first time that they will be at our home on
Christmas day—actually, this is the first time we’ve had overnight house guests for
Christmas—ever. And don’t get me wrong, I know that my in-laws aren’t expecting anything fancy, but I want to celebrate their presence! So my mind has been spinning,
trying to think up easy ways to feed them without spending the whole week in
the kitchen, both cooking and cleaning, but still have festive meals that
everyone will enjoy.
The best way to simplify when entertaining houseguests is to
think outside the box. How am I doing that? I’m planning on serving breakfast for
dinner as I entertain my houseguests. Breakfast dishes are also great for entertaining a large crowd--think brunch, not dinner! Now, I am going to step it up a
notch from my typical weeknight repertoire of scrambled eggs, but you can bet
that I’m going to make my life as simple as possible!
Here's my Festive Crustless Quiche, the way we're going to go festive without making this mama crazy:

I don't know about you, but I'm all about making my life easier over the holidays and every day. Here are some simple time and effort saving "Smart-tips" that I'm implementing as I entertain my in-laws with this crustless quiche:
- It's a single dish with fruit on the side—easy meal!
- There's no crust (that’s a time consuming step--at least for me).
- While you're cooking your meat--brown more for the next meal! I only needed about 1/4 of a pound for this recipe, but I went ahead and cooked the rest of the package so that I have it on hand for spaghetti or another meal.
- I used Pam non-stick spray to make clean up easier--and it's even better now, with 99% less residue left behind that other competitors and zero calories.
- You can pre-chop the fresh veggies as early as the day before.
- Use red and green vegetables to make the dish festive!
- Puree the harder to swallow veggies to “hide” them from the kids—if they eat without a fight, it makes an everyday meal extraordinary!
Ingredients
6 eggs
4 oz sweet Italian Sausage
1 red bell pepper
1 green bell pepper
1 small onion

4 oz. (by weight) Mozzarella and Provolone blend of shredded cheese
Preheat oven to 350 degrees. Spray the pie dish with Pam.
Cook the sausage until brown.
While the sausage is cooking, puree the onion (you can chop it, but I have a little one who won't eat onions any other way).

Chop up the peppers, too.
Allow the sausage to drain and cool slightly. Mix all ingredients together.
I've found that if you involve the kiddos, they are more likely to try it, which makes for a much smoother holiday dinner!
Pour into prepared pie dish
Bake for 35 minutes. Enjoy!
