Chocolate Dipped Peanut Butter Cookies

I have people in my life who shall remain anonymous…but shockingly, they do not like chocolate. I know, it is horrifying to any person who considers themselves a chocoholic. However, these same people in my life who states that they do not like chocolate…loves the combination of chocolate and peanut butter. Although I do not understand this aversion to chocolate in its pure form, I am willing to work with my loved ones to make them happy.

Don’t get me wrong, chocolate and peanut butter makes me happy, too. Which makes this amazingly simple recipe even more worthwhile. How simple is this recipe? The peanut butter cookie base is so simple that you don’t really need the vanilla, and I have actually made them in a soviet bloc country, with an oven that did not have temperature settings. The only setting was low…medium…high. I kid you not. And then you just dip those cookies into chocolate. If you want an easy way to satisfy that chocolate/peanut butter craving, then this one is for you.

Here's what you need:

1 cup peanut butter
1 cup sugar
1 tsp vanilla
1 egg
1 bag semi-sweet chocolate chips

Preheat oven to 350. Mix all ingredients together except chocolate chips until combined.


Place dough on an ungreased cookie sheet by rounded teaspoons, about 1" apart. Press with a fork to get those signature marks on your cookie.


Bake for 10 minutes, until slightly browned. Allow to cool on a cookie sheet for 5 minutes, then remove to a cooling rack. Cool completely.


After the cookies are cool, melt your chocolate chips over a double boiler. Or do what I do and place a metal bowl over a pot full of boiling water. Dip the bottoms of each cookie in chocolate; allow to cool on wax paper.


This cookie is perfect for holiday parties, cookie swaps, and just every day munching!
