Mexican Pulled Pork (Carnitas) for a Crowd

As you know, I love my crock pot. It allows me to have dinner ready 5 minutes after we walk through the door. And this Mexican Pulled Pork is super flexible--you can serve it in a bun like a traditional barbecue sandwich, but it is also at home served in a tortilla like a taco. And since beef prices continue to rise this summer, I think carnitas are going to be our new tacos!


This recipe makes a lot of meat. I'm guessing that it will serve between 12-15 with possible leftovers. I made the big batch and now I can have this dish ready for the family at (almost) a moment's notice!

1 Tbsp cumin
1 Tbsp 5 pepper spice mix (or chili powder)
1Tbsp garlic powder
1 1/2 onions, cut in 1 inch chunks
1 7 lb bone-in boston butt pork roast
(1) 14 oz can of chicken broth
1 package of taco seasoning

Mix everything except the taco seasoning in a large crock pot. Cook on low for 8-10 hours. When meat is done, pull out and shred.


Reserve cooking liquid. Instead of water amount called for by the taco seasoning, mix with an equal amount of the cooking liquid, and simmer the taco sauce as called for on the package. Serve on a bun or tortilla, with taco sauce. Garnish as desired!
