Secret Ingredient Samoa Brownies

My favorite Girl Scout cookie is the Samoa. Chocolate…Coconut…Caramel….mmm,
what’s not to love? This time of year, it’s easy to find Girl Scout Cookies. But
what to do the other 11 months out of the year? This is very big issue in my mind.
So I came up with this brownie recipe, which has only 5
ingredients, all of which are pantry ingredients. Which in my mind is perfect
for trips. I mean, how easy is it when you are staying in a little condo at the
beach or mountains to whip this recipe up….because after all, you need snacks
on vacation, right?
Even better, you can convince yourself that this recipe is
slightly more healthy than a typical brownie dish, since it has pumpkin in it,
and we all know that pumpkin is full of vitamins A and C, right. (You can
ignore that I’m adding extra calories with the coconut and caramel and let me
cling to my illusions, ok? These are healthy brownies…that’s my story and I’m
sticking to it.)
Just a note, these brownies are more fudgy and less
cake-like. I like them that way. But if you prefer cake-like brownies, you may
have to forgo all the health benefits of the pumpkin and make your brownies
according to the box directions and then sprinkle the caramel and coconut on
top.
Secret Ingredient Samoas Brownies
1 family size box brownie mix
1 can pumpkin
1 cup semi sweet chocolate chips
2 cups coconut
Approximately 8 oz. caramel ice cream topping
Preheat oven to 350. Line 9x13 glass dish with foil and
spray with cooking spray. Mix brownie mix, pumpkin, and chocolate chips until
combined. Spread in baking dish and bake for 30 minutes, or until a toothpick
inserted 1 inch from edge comes out clean.
For last 5-10 minutes, place coconut in a single layer on a
cookie sheet. Stir every 5 minutes until toasted.
Let brownies cool for 5 minutes. Spread coconut on top.
Drizzle caramel topping on top.
Try to wait until cool to cut and eat! Yum!
