Apple Pumpkin Cake
9:35:00 PM
I love pumpkin cake.
You see, in my personal, humble opinion, pumpkin pie is lacking...something...maybe it's texture.
But last year, pinterest hooked me up to Noble Pig's Pumpkin Cake. And then I made that recipe, like, 4 times in the space of two months. Maybe more. And then I made my own version...Double Chocolate Pumpkin Cake.
But the holidays always bring me back to the pumpkin flavor. But the one thing that Noble Pig's recipe is that although the cake only has two ingredients, well, the icing had several more (sugar, apple cider, spices).
I wanted to simplify even more, and if possible, make a better product.
And oh, my goodness. I can say with complete honesty...I delivered.
This Apple Pumpkin Cake recipe has 3 ingredients. That's it.
And it's like a pumpkin pie and an apple pie got together and had a child...in cake form.
And if you don't get to eat it until the next day...well, warm it up. It's good cold, but it's even better warm.
Apple Pumpkin Cake
Ingredients:1 Box Cake Mix
1 16 oz. can of Pumpkin puree (not pumpkin pie filling)
1 can of apple pie filling
Optional: Cinnamon for Sprinkling
Cute Toddler: Optional
Preheat oven to 350. Mix pumpkin and cake mix.
Spread into a greased 8x11 dish or cake pan.
Bake10 minutes. Spread the apple pie filling on the cake. Sprinkle with cinnamon, if you like.
Then cook for 20-25 minutes more until toothpick comes out clean (except for the filling) and the filling is bubbling.
Enjoy!!
